- German Hot Potato Salad No. 511 Yields 6 Servings

- 6 Medium Potatoes 1/2 Cup Vinegar
- 4 Strips Bacon, Minced 1/2 tsp Salt
- 1/4 Cup Onion, Chopped 1/2 tsp Sugar
- 1/4 Cup Celery, Chopped 1/8 tsp Paprika
- 1 Dill Pickle, Chopped 1/4 tsp Dry Mustard
- 1/4 Cup Water

- Cook the potatoes in their jackets in a covered saucepan until they are
- tender.
- Peel the potatoes and slice while still hot.
- Heat the bacon in a skillet.
- When done, remove bacon and reserve.
- Using the bacon drippings, saute the chopped onion and celery until golden.
- Add the pickle.
- Heat the water, vinegar, salt, sugar, paprika and mustard to boiling.
- Combine the ingredients in the skillet, stir gently and serve at once with
- chopped parsley or chives.
- Leftovers are good served cold.
